Ingredients:
* 2 chicken breasts (at least 1/2 lb. each)
* 1 Tbsp olive oil
* ΒΌ cup shallots
* 1 Tbsp minced garlic
* 1/3 cup white wine
* 2/3 cup crumbled blue cheese (about 4 oz)
* 3/4 cup heavy cream
* 1 Tbsp finely chopped Tarragon
* 1 Tbsp butter
Preparation:
Slice each chicken breast lengthwise through the middle, creating two thin chicken breasts from the original breast.
In skillet, heat olive oil over medium heat. Sear the chicken, cooking three minutes on each side. Saute the shallots and garlic and deglaze the pan with the wine and turn the heat to low, simmering for 8-10 minutes until wine has reduced by half. Add cheese, cream. Reduce and let the sauce thicken. Finish with butter and dried tarragon.
